Ingredients

Scale

Main Ingredients

  • 1 fresh bone-in turkey breast (3 to 4 pounds)
  • 23 tablespoons olive oil or softened butter
  • Salt, to taste
  • Black pepper, to taste
  • 23 sprigs fresh rosemary
  • 23 sprigs fresh thyme
  • 23 fresh sage leaves
  • 4 garlic cloves, peeled and whole

For the Gravy

  • Pan drippings from roasted turkey breast
  • 1 small onion or 2 shallots, finely chopped
  • 2 tablespoons all-purpose flour or cornstarch (for gluten-free option)
  • 2 cups chicken broth or stock

Instructions

  1. Prepare the Turkey Breast: Pat the turkey breast dry thoroughly with paper towels to ensure crispy skin. Carefully loosen the skin without tearing, then rub salt, pepper, and finely chopped fresh rosemary, thyme, and sage directly onto the meat beneath the skin for deep flavor infusion.
  2. Roast the Turkey: Preheat your oven to 375°F (190°C). Place the turkey breast skin side up on a roasting pan. Drizzle with olive oil or dot with butter over the skin. Roast uncovered for approximately 1 to 1.5 hours, or until an internal thermometer inserted into the thickest part reads 165°F (74°C). Baste occasionally with pan juices to keep the meat moist and develop a golden brown skin.
  3. Rest the Turkey: Remove the turkey from the oven and loosely cover it with aluminum foil. Let it rest for at least 15 minutes. This resting period allows the juices to redistribute evenly, resulting in tender and juicy meat when sliced.
  4. Make the Gravy: While the turkey rests, place the roasting pan with drippings over medium heat on the stovetop. Add the chopped onion or shallots and sauté until softened and translucent. Sprinkle in the flour or cornstarch and stir constantly to form a roux. Gradually whisk in the chicken broth, stirring continuously until the gravy thickens to a silky consistency. Season gravy to taste with salt and pepper.
  5. Serve: Slice the turkey breast and arrange the pieces on a serving platter. Pour the homemade gravy over the turkey or serve it on the side so guests can add as desired.

Notes

  • Use a meat thermometer to ensure the turkey is cooked perfectly to 165°F (74°C).
  • Don’t skip resting the turkey after roasting to maintain juiciness and ease of slicing.
  • Save the pan drippings—they are essential for a rich, flavorful gravy.
  • Baste the turkey regularly during roasting for a crispier, golden skin.
  • Allow the turkey to come to room temperature for about 30 minutes before roasting to ensure even cooking.
