  • 2 cups sauerkraut, drained well
  • 1 lb ground meat (pork or beef)
  • 1 medium onion, chopped
  • 2 cups potatoes, diced or 8 oz noodles (your choice)
  • 1 cup shredded cheese (cheddar, gouda, or mozzarella)
  • 1/2 cup sour cream or cream cheese

  • 1 teaspoon caraway seeds
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Ingredients: Drain the sauerkraut thoroughly to remove excess moisture. Chop the onion and dice the potatoes or prepare the noodles as preferred. Brown the ground meat in a skillet over medium heat until fully cooked, then set aside.
  2. Sauté Aromatics: In the same skillet, sauté the chopped onions until they become translucent and fragrant. Add caraway seeds and paprika to the skillet and toast them lightly to bring out their flavor.
  3. Mix the Layers: In a large mixing bowl, combine the browned meat, sautéed onions with toasted spices, drained sauerkraut, and diced potatoes or noodles. Stir in the sour cream or cream cheese until well incorporated. Season with salt and black pepper to taste.
  4. Assemble the Casserole: Grease a baking dish and transfer the mixture evenly into it. Sprinkle the shredded cheese evenly over the top to form a creamy, golden crust when baked.
  5. Bake: Preheat the oven to 350°F (175°C). Bake the casserole for 30 to 40 minutes, or until the cheese is melted, golden, and bubbling. Allow the casserole to cool slightly before serving to improve texture and flavor melding.
