Ingredients

Scale

Main Ingredients

  • 2 cups frozen shredded hashbrowns (do not thaw)
  • 1/2 pound ground sausage (mild, spicy, or breakfast blend)
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 2 green onions, chopped
  • Salt, to taste
  • Black pepper, to taste

For Cooking

  • Olive oil or cooking spray (for greasing the mini muffin tin)

Instructions

  1. Cook the sausage: Heat a skillet over medium heat and cook the ground sausage until fully browned and crumbly. Use a slotted spoon to drain excess grease and set the sausage aside to cool slightly.
  2. Prepare the mixture: In a large bowl, combine frozen hashbrowns, cooked sausage, shredded cheddar cheese, chopped green onions, egg, salt, and pepper. Mix thoroughly until ingredients are evenly distributed.
  3. Form the bites: Grease a mini muffin tin or line it with silicone baking cups. Scoop the mixture into each cavity, pressing firmly to compact it. This helps the bites hold their shape when baked.
  4. Bake to perfection: Bake in a preheated oven at 400°F (200°C) for 20 to 25 minutes or until golden brown and crispy on the edges. Let them cool for a few minutes before removing from the tin.

Notes

  • Pre-cook sausage well and drain excess grease to avoid sogginess.
  • Do not thaw frozen hashbrowns; baking from frozen ensures crisp edges.
  • Press mixture firmly into the mini muffin tin to prevent crumbling.
  • Use a mini muffin tin for consistent size and easy portioning.
  • Experiment with cheeses like pepper jack or gouda for different flavors.
