Sheet Pan Smoked Sausage Tortellini

Sheet Pan Smoked Sausage Tortellini is a quick and flavorful one-pan meal combining smoky sausage, tender cheese tortellini, and roasted fresh vegetables. Ready in under 30 minutes with minimal cleanup, it makes a perfect hearty dinner for busy weeknights while allowing easy customization for various dietary preferences.

Ingredients

Scale

Proteins & Pasta

  • 12 oz smoked sausage (such as kielbasa or andouille), sliced into bite-sized pieces
  • 9 oz cheese tortellini (fresh or frozen, thawed if frozen)

Vegetables

  • 1 red or yellow bell pepper, chopped into chunks
  • 1 medium zucchini, chopped into chunks
  • 1 medium red onion, chopped into chunks

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Prepare the ingredients: Slice the smoked sausage into bite-sized pieces. Chop the bell peppers, zucchini, and red onion into similar-sized chunks for even roasting. If using frozen tortellini, thaw briefly or follow package instructions to prepare it for baking.
  2. Toss everything in seasoning and oil: In a large bowl, combine the sausage, chopped vegetables, and tortellini. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Gently toss to evenly coat all ingredients.
  3. Arrange on the sheet pan: Spread the mixture in a single, even layer on a large rimmed baking sheet. Make sure not to overcrowd to allow crisping and even roasting.
  4. Roast until golden and tender: Bake at 400°F (200°C) for 20 to 25 minutes, stirring halfway through. Sausage should brown slightly, vegetables become tender, and tortellini develop crispy edges.
  5. Serve warm and enjoy: Remove the sheet pan from the oven and let cool slightly. Optionally garnish with fresh parsley or grated Parmesan before serving for added freshness and flavor.

Notes

  • Choose fresh tortellini for best texture, though frozen works well if properly thawed.
  • Cut vegetables evenly to ensure uniform cooking.
  • Use a high-quality smoked sausage to maximize flavor depth.
  • Avoid overcrowding the pan to enable crisping rather than steaming.
  • Customize seasonings by adding smoked paprika or fresh herbs like basil or rosemary for different flavor profiles.
  • For variations, consider spicy sausage, vegetarian alternatives, or adding greens like spinach near the end of roasting.
