Ingredients

Scale

Vegetables & Legumes

  • 2 medium-sized sweet potatoes, peeled and cut into even chunks
  • 1 can (15 oz) chickpeas, drained and rinsed

Spices & Flavorings

  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt, to taste

Oils & Acids

  • 3 tbsp olive oil, divided
  • 1 tbsp fresh lemon juice

Dairy & Herbs

  • 1/2 cup crumbled blue cheese
  • 2 tbsp fresh parsley or cilantro, chopped (optional)

Instructions

  1. Prep the Sweet Potatoes: Preheat your oven to 300°F (150°C). Peel and cut the sweet potatoes into even chunks to ensure they roast slowly and evenly, allowing their natural sugars to caramelize beautifully.
  2. Roast the Sweet Potatoes: Toss the sweet potato pieces with 2 tablespoons of olive oil, garlic powder, and a pinch of salt. Spread them on a baking sheet in a single layer and place in the oven for about 1.5 to 2 hours until tender and golden, stirring halfway through to caramelize all sides.
  3. Prepare the Spicy Chickpeas: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a skillet over medium heat. Add smoked paprika, chili powder, and a sprinkle of salt. Sauté the drained chickpeas until they’re crisp on the outside and infused with the smoky, spicy flavors, about 5–7 minutes.
  4. Combine and Finish: Once the sweet potatoes are soft and caramelized, mix them with the spicy chickpeas in a serving dish. Crumble blue cheese generously over the top. Finish with a squeeze of fresh lemon juice and sprinkle with chopped fresh herbs for brightness and color.

Notes

  • Low and slow roasting unlocks the sweet potatoes’ full flavor and creamy texture.
  • Cut sweet potatoes uniformly for consistent cooking results.
  • Dry chickpeas thoroughly before sautéing to ensure maximum crunch.
  • Use good-quality blue cheese for the best creamy texture and flavor.
  • Adjust chili powder and smoked paprika amounts to balance heat with smokiness to your liking.
