Ingredients

Scale

Main Ingredients

  • 1 lb smoked sausage, sliced into 1/2-inch rounds (choose your favorite smoked variety such as kielbasa or andouille)
  • 2 lbs Yukon Gold or red potatoes, washed and cut into bite-sized chunks
  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced (any color)
  • 1 teaspoon dried rosemary (or thyme / oregano)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Wash and cut the potatoes into bite-sized, uniform chunks to ensure even cooking. Slice the smoked sausage into half-inch thick rounds. Chop the onion, mince the garlic, and slice the bell pepper so all ingredients are ready for mixing.
  2. Toss with Seasonings: In a large bowl, combine potatoes, sausage slices, onion, garlic, and bell peppers. Drizzle with olive oil, then sprinkle salt, pepper, and dried herbs over the mixture. Toss thoroughly to coat every piece evenly.
  3. Arrange in Baking Dish: Transfer the mixture evenly into a greased baking dish. Spread out to allow heat circulation and promote crispiness on the edges of the potatoes.
  4. Bake Until Tender: Preheat oven to 400°F (200°C). Bake the dish for 35-40 minutes, stirring halfway through to brown the potatoes on all sides and prevent sticking. The dish is done when potatoes are tender and golden, and the sausage is heated through with slightly crisp edges.
  5. Serve and Enjoy: Remove from oven and let rest a few minutes before serving. This resting period allows flavors to meld. Optionally garnish with fresh parsley, a squeeze of lemon, or hot sauce for extra zing.

Notes

  • Cut potatoes and sausage into even sizes for consistent cooking and texture.
  • Parboil potatoes for 5 minutes before baking to speed cooking and achieve a crispier crust.
  • Use smoked sausage varieties like kielbasa or andouille for rich smoky flavor.
  • Do not overcrowd the baking dish; spread ingredients out for proper roasting rather than steaming.
  • Infuse olive oil with dried herbs before tossing for deeper flavor penetration.
