Bang Bang Sauce

  • 2 cups cooked jasmine or basmati rice, or cauliflower rice
  • 2 cups Asian slaw mix (shredded cabbage, carrots, etc.)
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Prepare the Chicken: Cut chicken into bite-sized pieces. Lightly coat the pieces with seasoned flour or cornstarch to help the breadcrumbs adhere and to create a crispy coating.
  2. Bread the Chicken: Dip each chicken piece into beaten eggs, then thoroughly coat with panko breadcrumbs to ensure a crunchy texture once cooked.
  3. Cook the Chicken: Fry the breaded chicken pieces in vegetable oil until golden brown and cooked through, ensuring they remain juicy inside with a crisp exterior. Alternatively, bake at 400°F (200°C) for 20-25 minutes until crispy and cooked through.
  4. Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, hot sauce, lime juice, and garlic powder. Adjust the spiciness by adding more or less hot sauce according to your preference.
  5. Assemble the Bowl: Start with a base of steamed rice or cauliflower rice. Add a generous handful of Asian slaw mix. Top with the crispy chicken pieces. Drizzle the bang bang sauce evenly over the top. Garnish with sliced green onions, chopped cilantro, and serve with lime wedges on the side.
