Instructions

  1. Prepare the Ingredients: Peel and devein the shrimp if necessary. Finely chop garlic and onion. Open the can or jar of fire roasted tomatoes. Bring a large pot of salted water to boil for pasta.
  2. Cook the Pasta: Boil pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  3. Sauté Aromatics and Shrimp: Heat olive oil in a large skillet over medium heat. Add garlic, onion, and red pepper flakes or fresh chili. Cook until fragrant and translucent. Add shrimp and cook just until pink and opaque, then remove shrimp from skillet and set aside.
  4. Make the Sauce: Deglaze the skillet with white wine or broth, scraping up browned bits from the pan. Add fire roasted tomatoes and simmer to thicken and meld flavors.
  5. Combine Everything: Return shrimp to the skillet, add cooked pasta, and toss together. Use reserved pasta water as needed to loosen sauce. Stir in fresh herbs and season with salt and pepper to taste.
