  • 1 lb tender cut steak (ribeye, sirloin, or filet mignon)
  • Salt and pepper, to taste
  • 12 tbsp olive oil

Pasta

  • 8 oz pasta (fettuccine, penne, or spaghetti)
  • Salt, for pasta water

Sauce & Aromatics

  • 2 cloves garlic, chopped
  • 1 small onion, chopped
  • ½ cup heavy cream or 1 cup tomato sauce (choose based on preference)
  • 12 tbsp olive oil
  • Fresh herbs (basil, parsley, or thyme), chopped
  • Parmesan cheese, grated, for garnish
  • Salt and pepper, to taste

Instructions

  1. Prepare the Steak: Season your steak generously with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 3-4 minutes per side, depending on thickness and desired doneness. Once cooked, remove from heat and let it rest so the juices redistribute and remain locked in.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain well and reserve a cup of pasta water if you plan to thin the sauce.
  3. Make the Sauce: In the same skillet used for the steak, add a drizzle of olive oil and sauté the chopped garlic and onions until fragrant and golden. Pour in your choice of heavy cream or tomato sauce and bring to a gentle simmer. Season with fresh herbs, salt, and pepper to taste.
  4. Combine and Finish: Toss the cooked pasta into the sauce, adding reserved pasta water as needed to achieve a silky texture. Slice the rested steak thinly against the grain, then arrange it on top of or mix it into the pasta. Garnish with additional fresh herbs and grated Parmesan cheese for a luscious finish.
