Easy to make with simple ingredients, they offer a delightful texture contrast and freshness in every bite.

Ingredients

Scale

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 1/2 cup heavy cream or whipped topping

Crunchy Base

  • 1 1/2 cups graham crackers or crunchy cereal, crushed
  • 5 tbsp unsalted butter, melted

Topping

  • 1 cup fresh strawberries, washed and finely chopped
  • Additional crushed graham crackers or cereal (optional, for extra crunch)

Instructions

  1. Prepare the Crunchy Base: Crush graham crackers or your choice of crunchy cereal until fine crumbs form. Mix with melted butter until the mixture holds together well. Press it firmly into a lined baking tray or mini muffin pan and chill to set a firm base for your cheesecake bites.
  2. Make the Cheesecake Filling: Beat softened cream cheese with sugar, vanilla extract, and lemon juice until silky smooth. Gently fold in whipped cream or whipped topping to lighten the texture, ensuring a creamy but not dense cheesecake filling.
  3. Layer Strawberries: Wash and finely chop the fresh strawberries. Spoon a layer of cheesecake filling over the chilled crust base, then sprinkle chopped strawberries on top. For extra crunch, sprinkle some leftover crushed crackers or cereal over the strawberries.
  4. Chill Until Set: Refrigerate the assembled bites for at least 3 hours, or preferably overnight, to allow the cheesecake filling to firm up and flavors to meld beautifully.
  5. Serve and Enjoy: Carefully remove the cheesecake bites from the pan and arrange them on a serving platter. Optionally garnish each bite with a fresh strawberry slice or a small mint leaf for an elegant touch.

Notes

  • Use room temperature cream cheese for smooth blending and to prevent lumps.
  • Chill the crust well to keep it firm and crunchy, avoiding sogginess.
  • Choose ripe strawberries for optimal natural sweetness and flavor.
  • Avoid overmixing when folding in whipped cream to keep the filling light and airy.
  • Prepare the bites ahead of time; flavors improve after resting.
