Instructions

  1. Roast the Sweet Potatoes: Preheat the oven to 425°F (220°C). Peel and cube the sweet potatoes into evenly sized pieces to ensure uniform roasting. Toss the cubes with olive oil, salt, pepper, and a pinch of garlic powder. Spread them out in a single layer on a baking sheet and roast for 20–25 minutes, turning once halfway through, until tender and crispy on the edges.
  2. Cook the Ground Beef: While the sweet potatoes roast, heat a skillet over medium heat. Add the ground beef and break it up with a spoon. Season with salt, pepper, onion powder, and smoked paprika. Cook until browned and fully cooked, about 6–8 minutes. Drain excess fat if needed.
  3. Assemble the Bowls: Divide the roasted sweet potatoes between serving bowls. Top each portion with the seasoned ground beef, then spoon cottage cheese generously over the top. Finish by sprinkling with chopped fresh parsley for freshness and color.
