  • 1/4 cup warm water (for dissolving gelatin or agar-agar)

Instructions

  1. Prepare the crust: Crush the graham crackers or digestive biscuits into fine crumbs. Mix with melted butter and sugar until well combined. Press the mixture firmly into the base of a springform pan or serving dish. Chill in the refrigerator to set while you prepare the filling.
  2. Blend the mango puree: Peel and dice fresh ripe mangoes. Blend until smooth using a blender or food processor. Set aside about two-thirds of the puree for the filling, reserving the remaining puree for topping or layering later.
  3. Make the cheesecake filling: In a large bowl, beat softened cream cheese until smooth and fluffy. Gradually add sugar, heavy cream or sour cream, fresh lemon juice, and the reserved mango puree. Mix thoroughly to achieve a creamy and luscious texture.
  4. Add gelatin or agar-agar (optional): If you prefer a firmer cheesecake, dissolve gelatin or agar-agar powder in warm water according to package instructions. Gently fold the dissolved gelatin mixture into the cream cheese filling until fully combined.
  5. Assemble and chill: Pour the filling over the chilled crust, smoothing the top evenly with a spatula. Refrigerate the cheesecake for at least 4 to 6 hours, preferably overnight, until fully set and firm.
