Ingredients

Scale

Protein & Aromatics

  • 1 lb lean ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced

Vegetables & Fresh Ingredients

  • 1 bell pepper, diced
  • 2 ripe tomatoes, diced (for pico de gallo)
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, ripe
  • 1 lime, juiced

Spices & Oil

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt, to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare the Pico de Gallo: Dice fresh tomatoes, onions, cilantro, and jalapeño, then toss with lime juice and a pinch of salt. Set aside to let the flavors mingle while you cook.
  2. Make the Guacamole: Mash ripe avocado with lime juice, salt, and a little minced garlic or onion if desired. Keep it simple and creamy, perfect for topping the skillet.
  3. Cook the Turkey and Veggies: Heat olive oil in a large skillet over medium heat. Sauté chopped onions and garlic until fragrant, then add ground turkey. Cook until it starts to brown, breaking it apart as it cooks. Toss in diced bell peppers, and season with cumin, chili powder, smoked paprika, and salt.
  4. Combine and Simmer: Once the turkey is cooked through and peppers are tender, reduce heat and stir in some pico de gallo, reserving a portion for garnish. Let it simmer for a few minutes so all the flavors marry deliciously.
  5. Serve with Guacamole and Extra Pico: Plate the skillet and dollop freshly made guacamole on top, finishing with a sprinkle of remaining pico de gallo. Serve immediately.

Notes

  • Use Fresh Lime Juice: It brightens both the pico and guacamole and enhances overall flavor.
  • Don’t Overcook the Turkey: Keep it juicy by monitoring closely and avoiding dryness.
  • Prep Ahead: Chop vegetables and prepare pico and guacamole in advance to streamline cooking.
  • Balance Heat and Creaminess: Adjust jalapeño and guacamole amounts to your preferred spice level.
  • Use a Nonstick Skillet: Helps prevent sticking and simplifies cleanup.
