Instructions

  1. Prep the Aromatics: Dice the onion and finely mince the garlic. Heat olive oil in a large pan over medium heat and gently sauté the onion until translucent. Add the garlic and cumin seeds (if using) and cook for another minute until fragrant.
  2. Toast the Rice and Spices: Add the rinsed, dry basmati rice to the pan and stir well, coating each grain with the oil and spices. Sprinkle the ground turmeric evenly over the rice, stirring constantly to toast the spices lightly and bring out their aroma.
  3. Add Liquid and Chickpeas: Pour in the vegetable broth and add the rinsed canned chickpeas. Stir to combine, season with salt and pepper, then bring the mixture to a boil.
  4. Simmer Until Tender: Once boiling, reduce the heat to low, cover the pan tightly, and let it simmer for about 15 minutes or until the rice is tender and the liquid is fully absorbed.
  5. Fluff and Garnish: Remove from heat and let the rice rest covered for 5 minutes. Fluff gently with a fork, then sprinkle chopped fresh parsley or cilantro on top before serving.
