  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 to 3 tablespoons water or plant milk (such as almond, soy, or oat milk)

Instructions

  1. Prepare the Raspberry Compote: In a small saucepan, combine fresh raspberries with maple syrup and lemon juice. Cook over medium heat for 8-10 minutes until the berries break down and the mixture thickens slightly. Remove from heat and set aside to cool.
  2. Blend the Mousse Base: In a blender or food processor, add ripe avocados, unsweetened cocoa powder, maple syrup, vanilla extract, a pinch of salt, and a splash of plant milk or water. Blend until creamy and smooth, scraping down sides as needed to combine evenly.
  3. Adjust Texture and Taste: Taste the mousse and adjust sweetness or chocolate intensity as preferred. Add more maple syrup for sweetness, cocoa powder for richer chocolate flavor, or plant milk to lighten the texture. Blend again briefly.
  4. Assemble and Chill: Spoon the mousse into serving glasses or bowls. Top generously with the raspberry compote. Refrigerate for at least 1 hour to allow flavors to meld and mousse to firm up slightly before serving.
