Chocolate Coating

  • 200g high-quality dairy-free dark or semi-sweet chocolate
  • 1 tablespoon coconut oil

Peanut Butter & Jam Filling

  • 120g creamy, unsalted natural peanut butter
  • 2 teaspoons of your favorite fruit jam (raspberry, strawberry, apricot, or others)
  • Pinch of salt

Instructions

  1. Prepare your chocolate: Chop the dairy-free chocolate and melt it gently with coconut oil using a double boiler or microwave in short bursts, stirring frequently until silky and smooth.
  2. Form the chocolate base: Using silicone molds or mini cupcake liners, spoon a thin layer of melted chocolate into each and swirl the sides carefully to coat. Place molds in the fridge to set for about 15 minutes.
  3. Add the peanut butter and jam filling: Mix creamy peanut butter with a pinch of salt until smooth, then carefully dollop a small spoonful in the center of each chocolate base. Follow by adding a little jam on top of the peanut butter for a burst of sweet flavor.
  4. Seal with chocolate: Cover the filling with another layer of melted chocolate, ensuring it’s completely sealed. Smooth the top with the back of a spoon or spatula, then refrigerate the cups until fully firm, about 30 minutes.
  5. Remove and enjoy: Pop the chocolate cups out of their molds gently, arrange them on a plate, and serve immediately or store for later indulgence.
