Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry, then season both sides generously with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and sear the chicken until golden brown on both sides but not fully cooked through, about 3 minutes per side. Set aside.
  2. Sauté the Aromatics and Spinach: In the same skillet, add minced garlic and cook until fragrant, about 30 seconds. Add fresh spinach and stir until wilted, softening the texture and bringing out sweetness.
  3. Make the Creamy Sauce: Reduce heat to low and stir in softened cream cheese, heavy cream, grated Parmesan, and chopped sun-dried tomatoes into the spinach mixture. Stir gently until the cream cheese melts and the sauce becomes smooth and creamy.
