Buttermilk Fried Chicken Is Irresistible

Buttermilk Fried Chicken is a classic Southern dish featuring crispy, golden crusted chicken that is juicy and tender on the inside. Marinated in tangy buttermilk and seasoned with a flavorful blend of spices, this recipe delivers an irresistible combination of rich flavor and perfect crunch. Ideal for any occasion, this comforting dish is simple to prepare yet impressive in taste.

Ingredients

Scale

Chicken & Marinade

  • Bone-in, skin-on chicken pieces (about 3-4 lbs)
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)
  • 1 teaspoon salt (for marinade)

Seasoned Flour Coating

  • 2 cups all-purpose flour (or rice flour/gluten-free blend for gluten-free)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ¼ teaspoon cayenne pepper

For Frying

  • Vegetable oil (enough for deep frying)

Instructions

  1. Marinate the Chicken: Thoroughly coat the chicken pieces in a mixture of buttermilk, hot sauce (if using), and salt. Cover and refrigerate for at least 4 hours, preferably overnight, to tenderize and infuse flavor.
  2. Prepare the Seasoned Flour: In a large bowl, whisk together the flour, salt, black pepper, paprika, garlic powder, and cayenne pepper to create a well-balanced seasoning mix for the crispy coating.
  3. Dredge the Chicken: Remove each piece of chicken from the marinade, allowing excess buttermilk to drip off. Generously coat the chicken with the seasoned flour mixture, pressing gently to ensure it sticks evenly.
  4. Heat the Oil: Pour vegetable oil into a deep pan or skillet and heat to 350°F (175°C). Use a thermometer to maintain a consistent temperature critical for even cooking and a non-greasy crust.
  5. Fry the Chicken: Carefully place the chicken pieces into the hot oil in batches to avoid overcrowding. Fry each batch for 12-15 minutes, turning occasionally until the crust is a deep golden brown and the internal temperature reaches 165°F (75°C).
  6. Drain and Rest: Transfer the fried chicken to a wire rack set over a baking sheet to drain excess oil. Let the chicken rest for a few minutes before serving to retain juiciness and crispness.

Notes

  • Use bone-in, skin-on chicken for juicier meat and best flavor.
  • Allow the chicken to marinate long enough for maximum tenderness.
  • Maintain oil temperature carefully to avoid greasy chicken.
  • Double dredge the chicken (dip back into buttermilk, then flour again) for an extra crunchy crust.
  • Rest chicken on a wire rack instead of paper towels to keep crust crisp.
