Shrimp and Sausage

  • 1 lb peeled and deveined shrimp
  • 8 oz smoked sausage, sliced into bite-sized pieces

Sauce and Seasoning

  • 4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese

Pasta

  • 8 oz fettuccine or linguine pasta

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare Pasta: Cook pasta according to package instructions until al dente. Drain, reserving about ½ cup of pasta water, and set pasta aside.
  2. Cook the Sausage: Heat a large skillet over medium heat. Add sliced smoked sausage and sauté until browned and slightly crispy on the edges, about 5-7 minutes. Remove from skillet and set aside.
  3. Sauté the Shrimp: In the same skillet, add olive oil and 2 tablespoons of butter. Toss shrimp with Cajun seasoning and cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside with sausage.
  4. Make the Alfredo Sauce: Add remaining 2 tablespoons of butter to the skillet. Sauté minced garlic until fragrant, about 1 minute. Pour in heavy cream, bring to a gentle simmer. Gradually stir in Parmesan cheese, stirring constantly until sauce thickens and is smooth without lumps.
  5. Combine and Serve: Return sausage and shrimp to the skillet with Alfredo sauce. Add cooked pasta and toss until everything is well coated and heated through. Add reserved pasta water a little at a time if sauce needs loosening. Finish by sprinkling with chopped fresh parsley before serving.
