Instructions

  1. Prepare the Filling: Sauté the fresh spinach and minced garlic in olive oil over medium heat until the spinach is wilted and the garlic is fragrant. Remove from heat, then stir in chopped artichoke hearts, cream cheese, shredded mozzarella, and Parmesan cheese until fully combined and creamy.
  2. Prep the Chicken: Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through. Season the outside of the chicken breasts with salt and freshly ground black pepper.
  3. Stuff the Chicken: Generously fill each chicken pocket with the prepared cheesy spinach artichoke mixture. Use toothpicks as needed to secure the openings and prevent the filling from spilling out during cooking.
  4. Cook the Chicken: Heat a skillet with a little olive oil over medium heat. Sear each stuffed chicken breast for 3-4 minutes on each side until golden brown. Then transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the chicken is cooked through and the cheese filling is bubbly.
