  • 1/2 cup grated Parmesan cheese

Pasta & Pantry

  • 8 oz pasta of choice (fettuccine, penne, or rigatoni)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning (basil, oregano, thyme blend)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Splash of white wine or vegetable broth

Instructions

  1. Prepare the pasta: Bring a large pot of salted water to a boil and cook your chosen pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of pasta water to thin the sauce if needed.
  2. Sauté mushrooms and garlic: Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and cook until golden brown and their juices are released. Stir in minced garlic and cook for another 1-2 minutes until fragrant, avoiding burning.
  3. Build the sauce: Deglaze the pan with a splash of white wine or vegetable broth if desired, then stir in chopped sun-dried tomatoes. Pour in the heavy cream and sprinkle Italian seasoning. Allow the mixture to simmer gently until it thickens slightly.
  4. Add greens and cheese: Stir in fresh spinach or kale and let it wilt gently in the warm sauce. Fold in grated Parmesan cheese until melted and smooth. Taste and season with salt and black pepper as needed.
  5. Combine pasta and sauce: Toss the cooked pasta into the skillet, ensuring each piece is thoroughly coated with the creamy mushroom sauce. Add reserved pasta water as needed to adjust the sauce to your preferred consistency. Serve warm.
