Ingredients

Scale

Main Ingredients

  • 8 oz pasta (penne, fettuccine, or spaghetti)
  • 1 lb lean ground beef
  • 3 cloves garlic, freshly minced
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain the pasta, reserving about one cup of pasta water, and set aside to maintain texture for the sauce.
  2. Cook the Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through. Season with salt and pepper while cooking to develop flavor.
  3. Sauté the Garlic: Push the cooked beef to one side of the skillet. Add butter to the empty side, then add the minced garlic. Sauté for 1 to 2 minutes until fragrant, being careful not to burn the garlic.
  4. Make the Sauce: Pour the heavy cream into the skillet and bring it to a gentle simmer. Gradually stir in the freshly grated Parmesan cheese, a handful at a time, allowing it to melt completely and create a velvety, cheesy sauce.
  5. Combine Pasta and Sauce: Add the drained pasta to the skillet and toss well to coat every strand with the creamy parmesan garlic sauce and beef mixture. If the sauce is too thick, add reserved pasta water as needed to loosen it.

Notes

  • Use freshly grated Parmesan cheese instead of pre-grated for better sauce texture.
  • Do not overcook garlic to prevent bitterness; sauté just until fragrant.
  • Reserve some pasta water to adjust the sauce consistency if needed.
  • Simmer the cream sauce gently to avoid curdling.
  • Season gradually and taste as you go because Parmesan adds natural saltiness.
