Instructions

  1. Prepare the Chicken Filling: In a bowl, combine the shredded cooked chicken, shredded cheese, Mexican seasoning mix, and chopped green onions or cilantro. Mix well to evenly distribute all flavors and cheese.
  2. Warm the Tortillas: Lightly warm the tortillas on a hot skillet or in the microwave for a few seconds until pliable to prevent cracking when rolling.
  3. Roll the Taquitos: Place about two tablespoons of the chicken mixture near one end of each warm tortilla. Roll the tortilla tightly but gently around the filling to contain it securely. Use toothpicks if necessary to hold the taquitos together while cooking.
  4. Cook Until Crispy: You can either shallow fry the rolled taquitos in hot oil (around 350°F / 175°C) until golden brown and crispy, or place them on a baking sheet brushed or sprayed with oil and bake in a preheated oven at 425°F (220°C) for about 20 minutes, turning halfway through, until crisp.
  5. Drain and Serve: After cooking, place the taquitos on paper towels to drain excess oil if fried. Serve immediately while warm and crispy, with optional garnishes like sour cream, salsa, cilantro, or lime juice.
