Garlic Parmesan Cheeseburger Bombs

Garlic Parmesan Cheeseburger Bombs are bite-sized snacks packed with juicy ground beef, melty mozzarella, and savory Parmesan cheese, all wrapped in flaky puff pastry. Enhanced with a bold garlic kick and finished with a buttery parsley brush, these flavorful bombs are perfect for parties, family dinners, or whenever you crave a cheesy, savory treat.

Ingredients

Scale

For the Filling

  • 1 lb ground beef (80/20 for juiciness)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese, plus extra for brushing
  • 1 tsp garlic powder
  • 2 cloves fresh garlic, minced
  • 1 tsp onion powder
  • Salt and black pepper to taste

For the Pastry

  • 1 sheet puff pastry (thawed if frozen)
  • 2 tbsp butter, melted
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Prepare the Filling: Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Once fully cooked, drain excess fat. Add garlic powder, onion powder, salt, pepper, and freshly minced garlic, stirring to combine. Mix in shredded mozzarella and grated Parmesan cheeses. Let the mixture cool slightly before assembling.
  2. Prepare the Puff Pastry: Roll out the puff pastry sheet on a lightly floured surface. Cut into evenly sized squares, approximately 3 to 4 inches per side, depending on your preferred bite size.
  3. Assemble the Bombs: Place a generous spoonful of the beef and cheese mixture in the center of each pastry square. Fold the corners inward and pinch the edges tightly to seal, ensuring no filling leaks out during baking.
  4. Brush and Bake: Mix melted butter with chopped parsley and a sprinkle of grated Parmesan cheese. Brush this mixture generously over the tops of the sealed bombs. Place them on a parchment-lined baking sheet and bake at 400°F (200°C) for 15-20 minutes, or until the puff pastry is golden and puffed.

Notes

  • Don’t overfill the pastry pockets to prevent leaks during baking.
  • Keep puff pastry cold until just before assembling for the best flaky texture.
  • Brush bombs generously with the butter-parsley mixture for a golden, flavorful crust.
  • Use finely minced fresh garlic to maximize aroma without overpowering the filling.
  • Let the assembled bombs rest for a few minutes before baking to help seals firm up.
  • Taste and adjust seasoning in the beef mixture before assembling.
