Ingredients

Scale

Dry Ingredients

  • 1 cup Almond Flour (finely ground)
  • 1 1/2 cups Powdered Sugar
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Salt

Meringue Ingredients

  • 3 large Egg Whites (room temperature)
  • 1/2 cup Granulated Sugar

Buttercream Filling

  • 1/2 cup Unsalted Butter (softened)
  • 1 1/2 cups Powdered Sugar
  • 2 tbsp Molasses or Dark Brown Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Cinnamon
  • Pinch of Ground Cloves

Instructions

  1. Prepare Your Ingredients and Equipment: Gather all ingredients. Sift the almond flour and powdered sugar together to remove lumps and achieve a fine texture. Line baking sheets with parchment paper or silicone mats for easy removal.
  2. Make the Gingerbread-Spiced Meringue: Beat egg whites until frothy. Gradually add granulated sugar while continuing to beat until stiff, glossy peaks form. This stable meringue ensures the macarons’ signature texture.
  3. Fold in the Dry Ingredients Carefully: Gently fold the sifted almond flour mixture with spices into the meringue. Combine thoroughly without deflating to maintain a light, airy batter.
  4. Pipe the Batter onto the Baking Sheet: Transfer batter to a piping bag and pipe small, even 1.5-inch diameter circles. Tap the baking sheet lightly to release air bubbles and create smooth shells.
  5. Let the Shells Rest Before Baking: Allow piped circles to rest at room temperature for 30-60 minutes until a firm skin forms on top, preventing cracks and encouraging “feet.”
  6. Bake Until Just Right: Bake in a preheated oven at 300°F (150°C) for 14-16 minutes. Macarons should rise, form feet, and have crisp shells with slightly soft centers.
  7. Prepare the Gingerbread Buttercream Filling: Whip softened butter, powdered sugar, molasses, vanilla extract, and spices until creamy and fluffy. Spread or pipe onto half of the cooled shells.
  8. Assemble Your Gingerbread Macarons: Match shells by size and sandwich fillings carefully. Press lightly to even out filling without overflowing.

Notes

  • Sift All Dry Ingredients: Ensures smooth, crack-free shells.
  • Use Room Temperature Eggs: Creates a more stable and voluminous meringue.
  • Don’t Skip the Resting Time: Crucial for shell formation and feet development.
  • Practice Folding Technique: Fold until batter flows off spatula in thick ribbons (35-40 folds).
  • Use an Oven Thermometer: Maintains correct baking temperature for consistent results.
  • Allow Macarons to Mature: Refrigerate assembled macarons for 24 hours to enhance flavor and texture.
