Instructions

  1. Prepare the Choux Pastry: Start by bringing water and butter to a boil in a saucepan. Remove from heat and stir in the flour all at once until the mixture forms a smooth ball that pulls away from the sides. Let it cool slightly before adding eggs one at a time, mixing well to create a thick, glossy dough.
  2. Bake the Layers: Divide the dough into two equal parts and spread each onto parchment-lined baking sheets. Bake in a preheated oven at 425°F (220°C) on the middle rack for 20 to 25 minutes, allowing the pastry to puff up and develop a crisp, golden crust.
  3. Make the Custard Filling: Heat milk with half the sugar until almost boiling. In a separate bowl, whisk egg yolks, cornstarch, and remaining sugar until smooth. Slowly pour the hot milk into the yolk mixture while whisking to temper the eggs, then return everything to the pot.
