  • 1 cup sour cream
  • 1 ½ cups shredded sharp cheddar cheese
  • 6 slices cooked bacon, crispy and crumbled
  • 3 green onions, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts or thighs with salt, pepper, garlic powder, and onion powder. Cook them in a skillet over medium heat until golden and fully cooked, then set aside to cool before dicing.
  2. Cook the Potatoes: Wash and dice the potatoes into bite-sized pieces. Boil gently in salted water until tender but still firm, then drain.
  3. Make the Creamy Sauce: In a mixing bowl, combine softened cream cheese, sour cream, shredded cheddar, cooked bacon bits, sliced green onions, garlic powder, onion powder, salt, and pepper. Mix until smooth and well blended.
  4. Assemble the Casserole: Grease a baking dish. Layer the cooked potatoes evenly on the bottom, then scatter the diced chicken over the potatoes. Pour the creamy cheese and bacon sauce evenly on top and spread gently to cover all ingredients.
  5. Bake Until Bubbly: Preheat the oven to 350°F (175°C). Bake the assembled dish uncovered for 20-25 minutes until the cheese is melted, bubbly, and lightly golden on top. Let it rest for 5 minutes before serving.
