Mississippi Mud Chicken

Mississippi Mud Chicken is a rich, comforting Southern-inspired dish featuring tender, slow-cooked chicken pieces in a buttery, tangy, and savory sauce with a subtle spicy kick from pepperoncini peppers. Easy to prepare in a slow cooker or oven, this versatile recipe is perfect for weeknight dinners, meal prep, or special gatherings, delivering melt-in-your-mouth flavor and hearty satisfaction every time.

Ingredients

Scale

Chicken

  • 3 to 4 pounds bone-in, skin-on chicken thighs or drumsticks

Seasoning and Sauce

  • 1/2 cup (1 stick) unsalted butter
  • 1 packet (about 1 ounce) Ranch dressing mix (such as Hidden Valley Ranch)
  • 1 packet (about 1 ounce) Au Jus gravy mix
  • 5 to 7 pepperoncini peppers, whole or sliced
  • Optional: salt, to taste (depending on seasoning mixes)

Instructions

  1. Prepare the Chicken: Pat the chicken pieces dry thoroughly with paper towels to ensure the seasoning sticks well and to help the skin crisp during cooking. Arrange the chicken in a single layer inside your slow cooker or baking dish for even cooking.
  2. Add the Buttery Seasoning: Melt the unsalted butter in a small bowl or microwave-safe container, then stir in the ranch dressing mix and au jus gravy mix until fully combined. Pour this seasoned butter evenly over the chicken pieces, coating each one generously with the mixture.
  3. Add the Pepperoncini Peppers: Scatter the pepperoncini peppers over the top of the chicken and seasoned butter mixture. Their juicy texture and mild heat add a distinctive tang that balances the richness of the butter.
  4. Cook Low and Slow: For slow cooker: cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and falling off the bone. For oven: cover the baking dish with foil and bake at 350°F (175°C) for 45 to 55 minutes, then remove the cover and bake an additional 10 minutes to allow the sauce to thicken slightly.
  5. Final Touches: Once cooked, carefully transfer the chicken to a serving platter using tongs or a slotted spoon. Spoon the buttery sauce from the cooking vessel over the chicken. Garnish as desired with fresh chopped parsley or green onions, and serve warm.

Notes

  • Use bone-in, skin-on chicken pieces for better moisture retention and enhanced flavor.
  • Do not omit the pepperoncini peppers; they provide the signature tang and subtle heat essential to this dish.
  • Prefer unsalted butter to better control the saltiness.
  • Avoid overcrowding the chicken to ensure even cooking and to prevent steaming.
  • Save and use the leftover sauce as a delicious topping for rice, mashed potatoes, or other sides.
